Southeastern University - Head Coach
In his first season, Dinkel led the Fire to their first 50-win season, breaking the school record for wins, as well as the programs second Sun Conference Tournament title. The Fire also made their third NAIA Opening Round appearance.

In his second season at Southeastern, Dinkel led the Fire to their most historic season to date, winning a program-best 59 games and leading SEU to win the 2018 Avista NAIA-World Series. The Fire defeated four former National Champions in their perfect 8-0 sweep of NAIA postseason play. The championship marked the first NAIA National Title in Southeastern University Athletics history.

In 2019, Dinkel led the Fire to their first Sun Conference Regular Season Championship in program history. He also coached SEU to a return trip to the World Series where Southeastern finished fifth.

In a shortened 2020 campaign, Coach Dinkel guided SEU to a 26-1 mark and set the program record for win streak at 25.

In 2021, Coach Dinkel guided the Fire to a 51-9 overall record this season, their fourth-straight 50-plus win full season under Dinkel. He also guided Southeastern to a sweep of The Sun Conference Regular Season and Tournament Championships, a 3-0 sweep of the NAIA Baseball Opening Round Lakeland Bracket, and a third-consecutive appearance in the Avista-NAIA World Series. He also helped five individuals from the team sign professional contracts, including right-handed pitcher Brenden Heiss signing with the San Diego Padres.

The Fire became the first team since 2011 to win back-to-back Sun Conference regular season and tournament championships. They went on to sweep the Upland Bracket of the Opening Round and advance to the World Series. During their fourth-consecutive trip to Lewiston the Fire knocked off the defending champion, the No. 4 seed, No. 2 seed, and had to play the host and 19-time champion Lewis-Clark State three times, winning twice to claim the program's second national title.

During his six-year tenure as the head coach of Southeastern University, Coach Dinkel has helped 36 former players sign professional baseball contracts.

Sterling College - Head Coach
In five years as the head coach at Sterling, Dinkel’s teams compiled a 232-77 record.

During his time with the Warriors, Dinkel led the team to the NAIA National Tournament five times, advancing to the World Series in 2013 and 2016.

In Coach Dinkel's five season at the helm, the Sterling baseball program put itself in the upper tier of the NAIA. In 2013, Coach Dinkel guided the Warriors to a school and conference record for wins with 48, breaking the previous record of 45 which was set by coach Dinkel in his first season as the head coach in 2012.

In Dinkel's fifth Season the program embarked on another record breaking season, advancing to the NAIA World Series for the second time. Along the way breaking school and conference records for wins with 52. In Dinkel’s five seasons he has amassed two KCAC regular season championships, three KCAC tournament championships and two NAIA Opening Round championships.

Clarendon Junior College
Prior to arriving at Sterling College, Coach Dinkel spent two seasons as the Head Assistant/Recruiting Coordinator at Clarendon Junior College in Texas (2008-2010). While at Clarendon, Coach Dinkel helped lead the bulldogs to two regional births which put Clarendon College in the national polls on a consistent basis. In his two seasons the bulldogs had a record of 80-33.

Bethany College
Coach Dinkel spent 2005-2008 at Bethany College. He served as Associate Head Coach/Pitching/Head Recruiting Coordinator under then head coach Matt Tramel. During his tenure he helped guide the Swedes to the NAIA regional tournament in each of his seasons, in addition to winning three KCAC conference championships. Along the way he was instrumental in helping the Swedes break the conference record for wins, with over 40 wins in each season.

Coach Dinkel has coached many All-Conference performers which include 30 NAIA All-Americans, Two NJCAA All-Americans, nine Conference pitchers of the year, eight Conference players of the year, and numerous All-Region players.

Coach Dinkel has coached over 50 players that have gone on to sign a professional contract.

Coach Dinkel earned a bachelor's degree in health and physical education from Bethany College, and a Master's Degree in Secondary Education Sports Administration from East Central University.

Dahl also coached senior catcher Willie Estrada to the second NAIA Gold Glove in program history in 2019. In turn, Estrada was signed by the Philadelphia Phillies.

Prior to SEU, Dahl was an assistant at Point University for one season.

Prior to coaching for Point University, Dahl was the assistant coach at Sterling College in Sterling, Kansas. During his five seasons with the Warriors, their team ranked top-10 nationally in several different offensive categories, including: batting average (First-2016; Second-2015), home runs (First-2016), doubles (Second-2016), stolen bases (Fourth-2012), runs batted in (Sixth-2016), runs scored per game (Sixth-2012), slugging percentage (Second-2016; Fourth-2015), and hits (First-2016; Seventh-2015). Under Dahl, Sterling’s offense was a major factor in propelling the team to five straight NAIA opening-round appearances and two trips to the Avista NAIA World Series in 2013 and 2016.

Coach Dahl began his playing career at Ridgewater College in Willmar, Minnesota, where he was a part of back-to-back teams that advanced to the Junior College World Series, finishing as national runner-up in 2005. After junior college, Dahl transferred to Northwestern College where he played one year, earning All-UMAC first team honors. At Northwestern, he still holds the single-season records in home runs (12), RBI (49), slugging percentage (.743), and total bases (104). After his time at Northwestern, Dahl transferred to Sterling College in 2010, where he played his final year and earned his degree in Sports Management.

Erik his set to be married to his fiance Ashley. The two will reside in Lakeland.

Mendoza joined SEU after four seasons as an assistant at Faulkner University. Faulkner appeared in the Avista-NAIA World Series each of the four years of Mendoza's tenure with the Eagles.

"Mike is a proven winner and recruiter. He will be a tremendous asset to our staff and help us maintain a high-standard of excellence within the program," commented head coach Adrian Dinkel.

Mendoza started his coaching career as an assistant coach at Iowa Wesleyan University in 2013. In 2014, he was hired as an assistant coach at Ashford University, and after two seasons moved into the same position at Faulkner.

A native of San Gabriel, California, Mendoza was a two-year letterman at Glendale Community College and two-year letterman at Iowa Wesleyan University, all as an infielder. He was named WSC Player of the Year and a CCCAA All-American at Glendale and MCC Player of the Year and NAIA All-American at Iowa Wesleyan.

Mendoza also played two seasons of professional baseball, one in the Frontier League and another in the Pecos League.

He holds a bachelor's degree in public relations from Iowa Wesleyan.
