Most recently the Head Coach at New York Institute of Technology before it disbanded the athletics program in 2020, Apostolopoulos spent two years at Cedar Crest College from 2016-2018. In 209 games (207 starts) during her four-year collegiate career, Apostolopoulos hit .310 with 22 homers and 117 RBIs in 642 at-bats. Kutztown posted a 173-63 record (.733) during that span.
