Scott Erling has been at the helm of the Weber State men's golf program since 2013 and has been with the program since 2012. Originally hired as an Assistant Coach with the Wildcats' golf program, he was elevated to Head Men's Golf Coach in October of 2013, and assumed responsibilities as the department's Director of Golf in 2016. He has led the Wildcats to top-four finishes at the Big Sky Conference Championships in six of the seven league tournaments under his helm.

In 2022, the Wildcats won their first conference championship since 2011, and their first Big Sky title since 2002, as they shot a three-round total of 864 for a one-shot victory to earn the program's first NCAA Regionals appearance since 2002. Reese Fisher earned the tournament's individual medalist title after shooting rounds of 72, 64 and 70 for a 4-under par 206. Erling earned his first Big Sky Coach of the Year honor on the heels of the Wildcats' 2022 victory at Talking Stick Golf Club.

In the 2019 Big Sky Championships, Erling's Wildcats cut a 13-shot deficit in the final round down to a single shot before eventually falling two shots short in second place to Northern Colorado for the program's best finish. The team recorded 20 birdies and a pair of eagles in a 15-under par 273 on the day. The score was the second-lowest single round since the Big Sky reinstituted golf as a league-sponsored sport in 2015.

In 2022, Erling also led the Wildcats to the team title in the Cal Baptist-hosted Joust at Goose Creek tournament, where the Wildcats shot a total of 870 for a 10-shot victory margin over the field for the program's first tournament title under Erling. Brody Childs led the way for Weber State at the tournament, earning individual medalist honors with a 1-over par 214, while Reese Fisher finished runner-up, one shot back of Childs. The Wildcats also won a two-day match play event against Utah State to open the 2021-22 season, defeating the Aggies 12.5 to 3.5 at Logan Country Club.

Erling replaced Dave Kearl as coach of the Weber State men's golf team, who retired in the fall of 2011 after heading up the men's program at Weber State for the previous 11 years.

Erling has been a well known member of the local golf community for many years. He was the Head Golf Professional at the Ogden Golf and Country Club from 1998 to 2007, and has later remained as a Teaching Professional at the club.

In 2007, he left his position as the head pro at OGCC to become the Intermountain sales representative for Mizuno USA. Erling has also served as a sales representative for golf brands Black Clover, Iliac, and Dynamic Brands USA.

A native of southern Idaho, Erling was a three-time Gem State Conference Player of the year. He then played collegiate golf with Utah State, where he was a four-year letterwinner with the Aggies. In 2002, he was the individual medalist at the Southern Utah State University Invitational.

Following his career with the Aggies, Erling turned pro, and played on the Canadian Tour in 2003 and 2004.
